A sweeping renovation has given this 125-year-old Paddington institution a fabulous new face, making it one of the leading lights in Sydney's new generation of reinvented heritage pubs. This super-CALI-fragelistic Neutral Bay favourite was inspired by owners Ben and Hamish taking a surf trip to California. Unfortunately for them but happily for us, they struggled to find waves and instead ended up eating and drinking their way down the coast and fell in love with the food, drinks and ambiance. Returning to Sydney they poured this influence into their third venue, working with renowned designers Luchetti Krelle to evoke the laidback, southern Californian sandy vibe and feel. Retro chic and a San Diego beach bar look on the outdoor terrace combine with Mexican, North American and seafood emphasis including Cali-inspired share plates, tacos, mini dogs and ceviches. An extensive wine list with a focus on the Californian region, craft beers, local ciders, spirits and of course cocktails perfectly compliment the menu.

Tea Gardens Hotel

The Botanist Kirribilli

This much-loved north shore neighbourhood haunt is inspired by illustrious botanist Gerard Fothergill, who travelled the world researching plants and whose last years were spent running a small bookshop in the very building the restaurant now occupies. The Botanist pays homage to exploration and discovery, creating food and cocktail menus using abundant offerings of fresh produce, herbs and spices. The global share plate menu by head chef Justin Walshe (formerly of La Grillade), has temptations such as Tataki tuna with mixed radish salad, and Mahi Mahi ceviche with avocado, coconut, radish and tomato. The Botanist's cocktail menu also reflects its founding themes with simple and elegant flower and spiced infusions. Hamish sums it up like this: “enjoyable, classically made drinks with flair, focusing on fresh, lively flavours.” Pop by this March and try for yourself!
